GOOD EATING: AFTER DINNER MINT ICECREAM

This scrumptious dessert is thanks to my wife, who only makes it when “someone special” is coming over. Home-made icecream is always good, but this one uses a packet of after-dinner mints mixed through it for a burst of chocolate and mint that is fabulously smooth. It is perfect as a sweet treat with coffee for supper, or you could make it for a dinner party if you want to win friends for life. It's not too tricky, but it is very rich so you won't want to make it too often - if you can hold yourself back once you taste it!

AFTER DINNER MINT ICECREAM


INGREDIENTS:
2/3 cup water
1/2 cup sugar
250gm packet after dinner mints (the square flat ones with chocky on the outside work well)
4 egg yolks, beaten
300 ml cream

METHOD:


1. Put the water and sugar into a pot over a low heat and stir until the sugar dissolves. Bring to boil and stir for about two minutes.

2. Chop the mints roughly and place in a blender, add the hot sugar syrup.

3. Blend on high for 30 seconds, then add the egg yolks in a thin stream while the blender is still going. Add the cream the same way.

4. Blend for another minute or two until smooth and slightly frothy.

5. Pour the mixture into individual dessert glasses and put them on a tray in the freezer for a couple of hours.

6. Hide them from the kids!
